Uji-cha has mainly been produced in Yamashiro and Uji that are on the borders of the ancient capitals of Japan,Kyoto and Nara.Thanks to the ideal natural environment and geographical conditions for growing good tea as well as the traditional producing methods,Uji-cha has its unique umami(savory taste) that hasa been loved by people in the ancient capitals.Since Sen-no-rikyu established the tea ceremony and Baisa-o promoted the custom of drinking tea among citizens during the middle age,Japanese tea has been playing an important role in everyday life and spiritual culture in Japan.

抹茶の点て方　How to prepare Matcha

抹茶はダマにならないように、最初にふるい等でこしておきます。茶筅はあらかじめぬらしておきます。
茶碗にお湯を注ぎ、茶碗をあたためます。
お湯を捨てて、水滴が残らないようにふきんできれいにふきます。
茶碗に抹茶を1.5g(茶杓山盛り1杯半)いれます。
80℃にさましたお湯60mlをいれます。
最初に茶筅でダマにならないように軽くかき混ぜます。
茶筅を勢いよく前後に振り充分に泡立てます。
茶筅をゆっくり動かし、表面の泡を細かくし出来上がりです。
Put Matcha powder through a strainer, and dip the tips of Chasen (tea whisk) into water a little bit
Pour hot water into the bowl to warm it up.
Discard the water.Wipe the bowl with paper towel or bnapkin completely.
Place 1.5g of Matcha powder into the bowl.
Pour 60ml of hot water (80℃) there.
Dissolve the powder slowly with a bamboo whisk.
Then move the whisk back and forth quickly like writing a letter M or N to make bubbles on the surface.
Move the whisk slowly on the surface to make fine bubbles.
