We have combined traditional Uji Matcha and French Opera cake together.
As an opera is a mix of arts, “Kokonoe” is composed of the nine layers of almond sponge cake, Matcha cream and Strawberry cream.
A rich taste of almond, a little bitterness of Matcha, and sour-sweet strawberry make an ideal combination.
